Ok ok, i KNOW that sounds really bad, and is a very loaded statement. ;)
Anyhoo, went wheeling the other day.....and yes got to try out the new winch (stuck as a duck)........well, after properly hooking up the winch to my buddies TJ, and taking all precautions, i left my freaking passenger window open......CRAP!........so the first good pep on the gas slung all kinds of white mud/clay into the passenger seat. I cant seem to get this stuff off. I've used some stain removers with no prevail. Any thoughts? I have learned my lesson and will buy some seat covers to go wheeling in. thanks ya'll.

Did you check out this right here from Quadratec, http://www.quadratec.com/products/91083_201.htm
I had a similiar problem and it worked pretty well.
A cheaper alternative to seat covers is get some of those big plastic trash bags and pull one down over your seat for the back and then pull one over the bottom and put some tape around it so it doesn't move. It's really hot in the summer and it looks weird, but it works... I use them when I go thru the Pine Barrens and it works great.

I know on my seats everytime I get mud on them they leave marks for a little while, and seems like the stains slowly fade within a couple of weeks to a point where you can't hardly notice them. Never been able to find a cleaner that actually takes care of them, but on my seats the marks do go away.

You need to use a carpet extractor with a furniture tool. Apply a good shampoo with a sprayer and let it set 5 min to dwell. Then extract with hot hot water and let dry. Sorry I used to work for ServiceMaster in carpet and furniture cleaning. Hope this helps.
The one thing you don't want to do is use dish soap to clean any kind of cloth. You can never rinse it all the way out and the next time it rains you have foam.

Any good carpet cleaning company can do this for you. Call and see if you can bring the Jeep by at the end of the day when the crews are comming back in. They will have enough goodies left in the equipment to whip out a couple seats in 10 min or so.
