They have fire suits, still pretty scary though
I've gone to quite a few top fuel drag races especially in Pomona, Las Vegas and Seattle, the smell of the nitrous when they fire a car up in the pits is almost enough to send you to your knees it's so awesome

Even at that, Tony Kanaan suffered second degree (flash) burns on his palms and face at the IRL event last weekend when the valve on the fuel hose stuck open and started a fire.
Granted it wasn't all over, but those fire suits can only protect for so long, and only what they cover.
Typically, the gloves have Nomex backs, but the palms are usually leather. This way the driver has a better feel for the car on the wheel.
